VEGAN PESTO TOFU

INGREDIENTS
Spinach
Peas
Sundried Tomatoes
Tofu
Chili Flakes
FOR THE PESTO
100g Basil
Half Cup Olive Oil
1 Lemon Squeezed
Half Cup Pine Nuts
Garlic or Garlic Infused Oil
Pinch of Salt
COOKING INSTRUCTIONS
- Put all ingredients for pesto through the blender and put to the side
- Pan fry Tofu
- Add large handful of spinach, peas, sundried tomatoes and chilli flakes and mix through
- Stir the pesto through
- Serve & Enjoy
