SQUASH, TOFU & TAHINI SALAD

INGREDIENTS

Butternut Squash
Tofu
Pine Nuts
Sultanas
Rocket
Sundried Tomatoes
Cucumber

FOR THE TAHINI DRESSING

1 tbsp Tahini
1/2 Squeezed Lemon
1 tsp Garlic Oil or 1 Crushed Garlic Clove
Water

COOKING INSTRUCTIONS

  1. Cut squash into cube sizes and massage in 1 tbs of garlic oil (or plain olive oil) & roast for 30 minutes
  2. Cook tofu in frying pan
  3. Make Tahini dressing
  4. Add all remaining ingredients into a salad bowl & add the cooked tofu & squash
  5. Add the dressing, toss & serve
