MOROCCAN SPICED CARROT & SQUASH SALAD

INGREDIENTS

Rocket
Butternut Squash
Carrots
Sundried Tomatoes
Walnuts
Goats Cheese (optional)
Olive Oil
Cayenne Pepper
Za’atar
Cumin
Cinammon
Salt

COOKING INSTRUCTIONS

  1. Peel and chop the squash and carrots into chunks and cover in all the spices and a tbsp of olive oil
  2. Roast for 30 mins at 180 degrees celcius
  3. Put all other ingredients into a bowl and toss with olive oil and a squeeze of lemon
  4. Add in the roast veg and enjoy!
