MISO SOBA NOODLES WITH TOFU (GF)

INGREDIENTS

Tofu (or chicken)
150g Mushrooms
Broccoli
Soba Noodles
Sesame Seeds

FOR THE TOFU MARINADE

2 tbsp Tamari
1 tbsp Seasame Oil
1 tbsp Rice Vinegar
1 tbsp Maple Syrup
Chilli Flakes

FOR THE MISO PEANUT SAUCE

1 tbsp Sweet Miso Paste
2 tbsp Rice Vinegar
1 tbsp Sesame Oil
2 tbsp Tamari or Coconut Aminos
1.5 tbs Peanut Butter
2 tbsp Water (or more if you want it thinner)
Juice of Half Lime

COOKING INSTRUCTIONS

  1. Marinade Tofu + leave for 20 mins
  2. Cook Soba Noodles as per packet instructions then rinse in cold water (be sure not to overcook them as they can get sticky and clump together) 
  3. Make Peanut Sauce
  4. Add Seasame Oil to pan and start cooking mushrooms + tofu for 8 minutes, then add broccoli for another 2 mins
  5. Add Soba Noodles and peanut sauce and cook for 2 more minutes
  6. Serve and top with seasame seeds
