KALE, AUBERGINE & TAHINI

INGREDIENTS

Kale
Aubergine
Pines Nuts
Olive Oil
Salt + Pepper
Goats Cheese/Feta

For the Tahini Dressing

1 Squeezed Lemon
1 tbsp Tahini
1-2 tbsp Water
1 Crushed Garlic Clove or 1tsp Garlic Oil

COOKING INSTRUCTIONS

  1. Slice aubergine in half and score. Rub in olive oil, salt and pepper
  2. Roast for 35-40 mins at 200°C
  3. Massage olive oil and salt into the kale and bake for 10-15 minutes
  4. Toast Pine Nuts
  5. Serve Aubergine on top of the kale, add the cheese, tahini dressing and nuts
