BLUEBERRY & LEMON CAKE (GF)

INGREDIENTS

300g GF Plain Flour (I use Dove Farm)
65 ml Coconut Oil
2 Eggs
100 ml Unsweetened Almond Milk
1 tsp Vanilla Essence
2 tsp Baking Powder
1 tsp Bicarbonate Soda
100g Blueberries
4 tbsp Lemon
7-9 tbsp Maple Syrup (depending on how sweet you like it)
1 tsp Lemon Zest
1 tsp Apple Cider Vinegar
Pinch of Salt

COOKING INSTRUCTIONS

  1. Preheat oven too 180 degrees celcius
  2. Add all ingredients to the food processor and blend
  3. Pour into loaf tin and bake for 50 minutes
  4. Allow it to rest for 5 minutes then enjoy it with some dairy free yogurt 🙂
